2 cups milk
2 eggs
¼ cup sugar
¼ cup quick-cooking tapioca
¼ teaspoon salt (optional)
2 Tablespoons sugar
1 teaspoon vanilla

Directions:
Directions:
Measure milk into 4-cup glass measuring cup. Separate eggs. Add ¼ cup sugar, tapioca, salt and egg yolks to the milk. Blend well. Cook on high in microwave oven 6 to 10 minutes, or until the mixture boils. Stir after 4 minutes.

While tapioca is cooking in microwave -
Beat egg whites in large bowl until frothy. Gradually stir in 2 Tablespoons sugar; beating until mixture forms soft peaks. Beat in vanilla. When pudding mixture is fully cooked and thick, FOLD the tapioca INTO the egg whites. Cool.

Amount in photo has double the recipe. When Grandma would make this, she would put in a very large Tupperware bowl. Easily 4 times the recipe as shown, or more.

But, Art (Gilbert) and I (Judy Scott) would make sure it didn’t hang around too long taking up frig space. YUM!!!!!
