Carrot Cake

4 eggs
1½ cups cooking oil
3 cups sifted cake flour
3 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
1 cup (8 oz can) crushed pineapple in pineapple juice
2 cups grated carrots
1 cup chopped pecans or other nuts
Cream cheese frosting

Directions:

Beat eggs, oil and vanilla at high speed about 5 minutes until fluffy. Combine sifted flour, sugar, salt, baking powder, baking soda and cinnamon. With mixer at low speed, add dry ingredients to egg mixture ⅓ cup at a time. Add pineapple, grated carrot and nuts. Pour into 9 x 13 inch pan. Bake at 325º (glass pan) for about 50 minutes. Cool before frosting. (This cake can also be made with three 9x1½ inch round cake pans. Bake for about 25 – 30 minutes.)
 

Cream Cheese Icing

1 stick margarine (I use butter)
1 teaspoon vanilla
1 package (1 pound) powdered sugar
1 package (8 ounces) cream cheese

Soften butter and cream cheese. Mix butter, vanilla, powdered sugar and cream cheese thoroughly and spread on cooled cake.
