Picked out Lobster meat (1/2 lb per roll)

creme fraiche

mayonnaise

chives (fresh preferred)

lemons

(fresh red pepper, optional)

Directions:
Directions:
1/2 lb of cold picked out lobster per lobster roll

Put in the Additions: fresh lemon juice, creme fraiche, a little mayonnaise, chives (diced red pepper optional)

This is all about the LOBSTER, so put very little of the additions.

Grill buttered brioche rolls on each side and STUFF the lobster salad in it and serve.

Serves many as you want.
Takes about a half an hour to put together.

Well what is better when you live on Cape Cod than having a wonderful lobster roll on a nice summer day after a day at the beach?

Lobster rolls are refreshing and delectable all at once. The flavors are subtle because of course it is mostly lobster.

My kids just love them and Sam, Sam, Andrea and I especially enjoyed them during our COVID-19 quarantine time, as we socially distanced ourselves outside in the backyard this summer.
