Teriyaki turkey


Ingredients:

One pound ground turkey
Broccoli head
Shredded carrots
Onion
Garlic
Ginger
Green pepper
Red pepper
Kikkoman teriyaki soy sauce
Olive oil
Sesame oil
Salt
Pepper

Directions:
Directions:
1. Dice vegetables, chop broccoli crowns, shred carrots (or buy shredded) and sauté til al dente in olive/sesame oil with salt and pepper, sprinkle with teriyaki soy sauce
2. Set vegetables aside
3. Brown ground turkey
4. Add vegetables back to frying pan, stir in teriyaki sauce to taste
5. Serve over coconut rice
 

Coconut rice

One can coconut milk
Chicken stock
Rice
2 tbsp butter



Directions:

1. Add coconut milk and butter to sauce pan.
2. Fill coconut milk can with chicken stock, add to sauce pan
3. Fill coconut milk can with rice and add to sauce pan
4. Cook according to rice instructions.
 

Teriyaki sauce


Ingredients:  
Ingredients:  
1/2 cup Low Sodium Soy Sauce
1/4 cup water
2 tablespoons Red Wine Vinegar
2 tablespoons brown sugar or less as desired
2 tablespoons granulated sugar or less as desired
2 teaspoons minced garlic
1 teaspoon ground ginger
1 tablespoon cornstarch
2 tablespoons warm water

1. Mix soy sauce, 1/4 cup water, red wine vinegar, sugars, garlic and ginger in a small saucepan over medium heat. Stir with a whisk until sugar is dissolved.
2. In a small bowl, whisk together 2 tablespoons warm water and cornstarch until cornstarch is completely dissolved.
3. Heat sauce over medium high heat. Slowly whisk in cornstarch mixture and simmer until thickened. Remove from heat and set aside.
