Ingredients: 1/2 c oil 3 eggs, slightly beaten 1 1/2 c shrimp, cooked, chopped 4 1/2 c cooked rice (12 ounces before cooking) 1/2 c onion, sliced thin lenghtwise About 1 11/2 tsp salt ( only 1 tsp if using salted meat instead of shrimp: ham, pork) a little pepper 1 can Chinese bean sprouts, thoroughly drained 1 Tbsp Soy Sauce 1/3 c fresh green onion tops, cut 1/2 inch long (optional) 2 Tbsp pimiento, cut into 1/2 inch squares (optional)

Directions:In a large skillet, heat 1/2 c oil. Add slightly beaten eggs and cook for a few seconds, but do not allow eggs to become too firm. Break up with a fork during cooking process. Add the meat, rice, onion, salt and pepper, and last, the bean sprouts and soy sauce. Mix well with 2 forks. Cook together only until hot, about 10 minutes, covering pan for a few minutes. If it appears too dry, 2 Tbsp of fat may be added. One-third cup of fresh green onion tops and 2 Tbsp of pimiento squares may be added for addditional color. Brush a 7-inch bowl with shortening, pack rice into mold, turn over onto platter and surround with Egg Foo Yong or otherwise desired. |
