2 bunches collard greens(about 2 lbs.), washed
7 cups boiling water
¼ lb. salt pork, diced
½ tsp. minced garlic
¼ tsp. dried red pepper flakes
2 T. vinegar
3½ T. sugar
1 large meaty ham hock, or 2 cups ham, diced

Directions:

In 8 quart cooking pot bring water to a boil on medium high heat, add salt pork, ham hock, garlic and pepper flakes, reduce heat to medium, cover and boil for ½ hour. Remove ham hock and cut up and return to pot. Tear or cut leaves off greens from the thick center stems. Add to pot, cover reduce heat to med-low boil and cook ½ hour stirring occasionally. Add vinegar and sugar. Cook for 1½ hours. Stirring occasionally. Serves 6 to 8.
