1 1lb package of water-packed tofu, such as Nasoya (not pre-pressed)

If you are disinclined to buy pre-pressed tofu, you can firm up water packed tofu by wrapping the block in a tea towel, pressing lightly, and leaving it in the back of your refrigerator.

You needn't leave anything heavy on it.

The tofu is fine as it is, wrapped up, all week, and you can slice off and fry pieces as needed. Preparation time 24 hours. Serves 4-6. Easy tofu prep.
