1 T. Parsley
1 T. Basil
1 T. Oregano
1/2 t. Onion Powder
1/2 t. Garlic granules or powder
1/2 t. Salt
1/2 t. Pepper
Potatoes sliced, Carrots sliced, Tomatoes quartered, Broccoli, Cauliflower, Peppers sliced.

Directions:
Directions:
Take any vegetable you prefer. Mix olive oil and herbs in a bowl with a cover and whisk. Add the chopped, sliced, or whole vegetables in the bowl cover and shake. Roast in the oven at 400º for 10-20 minutes. The potatoes can also be fried on the stove until golden brown.

I highly recommend freezing the quartered tomatoes or sliced peppers. Just let the pan cool and then set it in the freezer. Take the frozen tomatoes or peppers and put them in a baggie or a freezer proof container. They are wonderful added to the chicken pasta or on pizzas. If you fry the potatoes they are great with steaks or perfect grilled venison.
