2 Tbs. Oil
Lb. Flank Steak, cut across the grain into 1" slices
Tbs. Curry Powder
Tbs. Ginger, finely minced
Salt & Pepper
3 Large Leeks, cut into 1/4" rings, washed and well dried ( put cut leeks rings in water, swish around and let the grit settle to the bottom, then lift Leeks out)

Directions:
Directions:
Heat wok or large pan over high heat, add Oil
Add Beef and stir-fry until medium rare, about 2 minutes, Season with Salt & Pepper
Add Curry Powder and Ginger, cook 1 minute
Add Leeks and stir-fry until softened, about 3 minutes, season with Salt & Pepper
Toss together and serve
