2 pounds of boneless, skinless chicken in chipotle marinade for 1 hour up to overnight
Marinade:
1/2 medium red onion, chopped
3 cloves garlic, chopped
2 Tbsp adobo sauce
2 Tbsp hot Mexican hot chile powder
2 Tbsp olive oil
2 tsp cumin
2 tsp oregano
salt and pepper
*place all ingredients in blender til smooth. Put in a measuring cup and fill to top with water.

1.5 cups salsa
black beans
corn
cilantro, chopped
Lettuce
cherry tomatoes

Directions:
Directions:
Place salsa in the bottom of 5 mason jars. Follow with a layer of cherry tomatoes. Add chicken, then black beans and corn. Follow with cheese, cilantro and lettuce.

Seal and keep in fridge for up to 5 days.
