2 fillets of fresh trout.

For Sauce:
5 oz white wine
10 oz heavy cream
Juice of 1/2 lemon
Pinch of sugar
2 tsp finely chopped tarragon (or dried)

Directions:
Directions:
Grill or pan fry trout — any way you prefer.

For the sauce:
In a small sauce pan bring wine to a boil, simmer to reduce.
Add cream—stir until thickened
Add lemon juice, sugar and tarragon.

Stir well.

Place trout on platter and spoon sauce over. Garnish with lemon slices
