FOR MEAT:
1 Tbsp olive oil
1/2 yellow onion, diced
2 cloves garlic, chopped
1 lb ground beef, browned
1/2 tsp sea salt
1/4 tsp pepper
1/2 tsp cumin
***(or taco lentil mixture)

Cilantro lime dressing:
1/2 cup greek yogurt
4 Tbsp almond milk
4 tsp lime juice
2 Tbsp chopped cilantro
2 cloves garlic, chopped
1/2 tsp sea salt

Salad:
2 cup cherry tomatoes
2 cups taco meat
1/2 cup shredded cheese
3 cups mixed greens
optional avocado
optional black beans and corn kernels

Directions:
Directions:
Prepare 5 32 oz mason jars. Layer with dressing in bottom, then tomatoes, then corn and beans (if using), then meat, then cheese, then lettuce. Place lid on tightly and keep in fridge for up to 5 days.
