Flour
Eggs
Salt, Pepper, Onion and Garlic Powder
Frying Oil
Frying pan, tongs, whisk, paper towels

Directions:
Directions:
Lightly season the flour and eggs with the spices

Clean and peel the eggplant

Use mandolin to slice thin

Dip in flour, then egg

Fry and drain on paper towels

Sprinkle with salt when removed from oil

Let cool and wrap in freezer wrap

1 bushel = about 14 eggplant
If buying a bushel - use about 7 for pickling (12 jars) and 7 to freeze

10 eggplant: use about 4 - 5 dozen eggs

13 packages of about 30 slices
2 packages of long slices - about 28-30
1 package scraps for Pasta alla Norma
