Two (2) Lbs. of Fresh Yellow Summer Squash – (cooked and drained);
One (1) TBS Butter;
One (1) Carrot (grated);
One (1) medium Vadalia (after all, this is a Georgia recipe)Onion diced;
One (1) Cup Sour Cream;
One (1) can Cream of Mushroom (or Chicken) Soup;
One (1) stick of Melted Butter;
One-half (1/2) package of Pepperidge Farm Herb Dressing Mix.

Directions:
Directions:
Grease a large Casserole Dish with the TBS of Butter

Sprinkle ½ of the Herb Dressing Mix (stuffing) on the bottom of the dish;

Combine all of the other ingredients, mixing well, and then. If added seasonings are desired, add them here. I generally lightly salt;

Pour the mixture into the Casserole Dish;

Top the mixture with the remaining Stuffing Mix;

Bake at 350 degrees until Bubbly. Voilà! Enjoy!
