Cut up sweet potatoes in equal size chunks of about 1”.

Toss in large bowl with 2 Tbsp olive oil, 2 Tbsp honey, 1 tsp ground cinnamon, salt and pepper to taste

Roast at 375 degrees for about 40 minutes, stirring half way through

Top greens with sweet potatoes, chunks of Granny Smith apple, walnuts, and dried cranberries, and goat cheese
