Ingredients: Use 10" (roughly) oven-safe skillet 3 tablespoon olive oil 1 onion 2 garlic cloves, chopped 1 Sweet potato-peeled and chopped Broccoli Peppers Mushrooms Zucchini and/or summer squash Tomato And...Whatever else you want (Cheese, ham sausage, bacon, other veggies, milk) 8 EGGS, BEATEN Salt, other spices

Directions:Preheat the oven to 350 degrees
Heat the skillet and pour in olive oil.
When oil is heated, add sweet potato to soften, 1-2 min.
Next add broccoli for 3 minutes or so, add each of the vegetables and meat as required to soften.
Salt and season the sautéed veggies (I like to use Z’atar (sumac, thyme, white sesame seeds and salt).
Add the beaten eggs, which you may add milk or water to, if you wish). After eggs set, put pan in the oven, and bake 15 minutes.
Put under broiler to brown 1-2 minutes. Let the pan sit to cool, and serve.
Preparation time 20 minutes. Serves 6. |
