⅓ C honey
¼ C soy sauce (use reduced sodium)
1 Tab jarred minced garlic or tsp fresh
optional: 1 tsp minced fresh ginger
1 lb med uncooked shrimp, peeled & deveined
2 tsp olive oil
optional: chopped green onion for garnish

Directions:

Whisk the honey, soy sauce, garlic and ginger together in med bowl.

Place shrimp in a large zipped bag or tupperware.
Pour ½ of marinade mixture on top, shake or stir, allow shrimp to marinade in the
refrigerator for 15 minutes or for up to 8-12 hours. Cover and refrigerate the rest of marinade for later. (time saving tip: while the shrimp is marinating. Steamed broccoli & microwaved some quick brown rice).

Heat olive oil in a skillet over med-high heat.
Place shrimp in the skillet (discard the marinate)
Cook shrimp on one side until pink - about 45 seconds - flip over.
Pour in remaining marinade and cook it all until shimp is cooked through, about 1 min more.

Serve shrimp with cooked marinade sauce and garnish of green onion. The sauce is excellent on brown rice and steamed veggies on the side.

note: If using refrigerated jarred minced garlic, use 1 TAB. If fresh use 2 tsp.
