11/2 c. heavy cream
3/4 c. milk
1 t. salt
1/2 t. pepper
2 cloves chopped garlic
4 strips diced bacon
6 large potatoes - pealed, sliced and pat dry
1/2 medium onion chopped
1 c. swiss cheese - shredded
1/4 c. cheddar cheese - shredded
1 T. butter
1/2 t. thyme
1/4 t. nutmeg

Preheat oven to 350º. In a saucepan cook bacon about 3 min., not crisp.
remove from pan and drain all but 1 T. or bacon fat. Add onion, garlic, thyme. Sauté just a bit. Pour in the cream, milk, salt, pepper, and nutmeg. Bring to a boil and then simmer for 5 min. Remove from the heat and let it cool a bit. In your serving, baking dish, lay one layer of potatoes. Mix the cheddar and the swiss chees together. Add some of the cream mixture and sprinkle with the cheese. Continue layers in the same manner ending with the cream mixture and the cheese on top. Bake 50 min. until potatoes are tender but not mushy. Let it rest for 10 min. to gel before serving. Can be prepared ahead and heated just before dinner. If so add a bit more cheese to the top.
