2 T. butter
8 oz. medium mushrooms, sliced
4 green onions, including green tops, sliced
6 large eggs
1 C. cottage cheese
1 C. sour cream
1/2 C. grated Parmesan cheese
1/4 C. flour
1/4 tsp. salt
1/8 tsp. white pepper
2 C. grated Jack cheese
1 C. flaked smoked salmon

Directions:
Directions:
Preheat oven to 350º F. Grease an 8 1/2 x 11 inch casserole.

1) In a medium skillet, melt butter, then sauté mushrooms and green onions until tender, about 5 minutes.
2) Blend everything else together, beginning with the eggs, then add the mushrooms and green onions.
3) Pour into the prepared dish and bake for about 45 minutes or until puffed up and golden.
4) Let stand for 10 minutes before serving.

VARIATIONS:
Instead of smoked salmon, use cooked ham or cooked chicken, or 8 oz. crab meat, flaked.
