2c. All Purpose Flour
2 lg. Eggs, beaten
1 1/4c. Sugar
2 tsp. Vanilla Extract
3/4c. Canola Oil

Directions:
Combine eggs, sugar, vanilla, and oil together in a bowl. Add flour to mixture 1/2c. at a time until combined. Once the dough is forming a ball, in the bowl, it is ready to be rolled out. Flour your board well as these cookies like to stick. Roll out your dough to about 1/4in. thick. Cut the dough with a round cookie or biscuit cutter. Since these will be the size of biscuits, lay about nine on the cookie sheet. Bake at 350° for about 8-10 minutes or until they are starting to turn golden.

Oh, How I love MeMaw's Teacakes, as she called them. She said her mom, Granny Faile use to make them when they had visitors come by. She said we would have hot tea and teacakes. She said, "We thought we were fancy."
These were my all time favorite thing when we would visit.
I loved how the bottoms would mix with the sugar and flour and be dusted.

You can change them up by changing out the extract. I have made lemon, almond and even strawberry teacakes.
