Ingredients: 2 ¼ tsp. yeast 1 ¼ cup warm water (105º to 115º F.) 3 ¼ cups all purpose flour ½ Tbsp. sea salt 1 Tbsp. oil

Directions:Dissolve yeast in warm water and let stand for about 5 minutes. In a large bowl, beat 1 cup of the flour with the yeast mixture, adding salt, to make a smooth batter. Add remaining flour and mix well. Dough will be stiff. Turn dough onto a floured board and knead for 10 minutes until smooth and elastic. Form dough into a smooth ball and place in a greased bowl with a lid or cover with plastic wrap. Cover and allow to double in size (about 90 minutes). Punch dough down and form a ball again. Cover and let rise until double again, about one hour. Punch down dough and roll into a flat round. (Or you can form a loaf and bake in a loaf pan) Place on a greased baking sheet or use parchment paper. (Parchment paper allows it to slide off easily when done) Cut into the top 4 shallow cuts forming a big X. Cover with a cloth and let it rise for 30 minutes. Bake at 375ºF for 30 minutes. If you thump the bottom it should sound hollow if done.

Notes: If dough is too stiff you can add a small amount more water or oil. You can add garlic or herbs to the dough (such as rosemary) if you want to add more flavor. The plain bread is delicious dipped into olive oil with salt, pepper or herbs.
