1 1/2 cups dry elbow macaroni 1/2 cup minced onion 1/4 cup minced celery 2 tbsp butter 1/3 cup flour 1/2 cup dry white wine 2 cups chicken broth 1 tsp dry mustard 1/8 tsp nutmeg 1/8 tsp cayenne 2 cups whole milk 4 cups shredded cheddar (sharp) 1 tbsp lemon juice 1/4 cup crumbled blue cheese 2 tbsp minced chives

Cook macaroni in salted water drain and set aside. In a saucepan sweat onion,celery and butter 4-5 min. Stir in flour cook a min. Deglaze pan with wine simmer 2-3 min stir in broth mustard nutmeg and cayenne simmer another 5 min. Whisk in milk do not let boil or base become grainy. Add cheddar 1 cup at a time allow to melt completely before adding another Stir in macaroni lemon juice salt/pepper. Combine blue cheese and chives in a bowl and garnish each serving.
