1 cup all-purpose flour
1 cup whole wheat flour
2 tsp cinnamon
1 tsp baking soda
¼ tsp baking powder
¼ tsp salt
1 cup sugar
½ cup applesauce
½ cup canola oil
3 large eggs
1 tsp vanilla extract
3 cups grated vegetable of choice (zucchini, sweet potato or carrot)
1 cup chopped walnuts

Directions:
Directions:
Preheat oven to 350º. Mix first six ingredients into medium bowl. Beat sugar, applesauce, oil, eggs and vanilla into a large bowl. Mix in vegetables. Add dry ingredients and walnuts and stir well. Put batter into prepared muffin pan. Cook for 25 to 30 minutes, until a toothpick comes out clean.
