8 (8 inch) flour tortillas
1 1/2 cups tomato juice
1 envelope taco seasoning mix
1 Tablespoon vegetable oil
1 pound ground beef
1 can (16 ounce) refried beans
3 cups shredded Cheddar cheese, divided
shredded lettuce
chopped tomatoes

Directions:
Directions:
Wrap tortillas in foil and bake at 350 degrees for 15 minutes or until thoroughly heated.
Combine tomato juice, seasoning mix and oil; stir well, and set aside

Cook ground beef in a large skillet until browned, stirring to crumble; drain. Stir in beans and 1/2 cup tomato juice mixture. Bring to a boil; cover, reduce heat and simmer 5 minutes or until mixture is heated through. Remove from heat.

Place 1/4 cup beef mix and 2 1/2 Tablespoons cheese down center of each tortilla. Roll up tortillas, and place seam side down in a lightly greased 9 x 13 baking dish.

Cover casserole and refrigerate 8 hours. Refrigerate remaining tomato juice mixture.
To SERVE: Pour remaining tomato juice mix over casserole. Cover and bake at 350 degrees for 30-40 minutes. Uncover and sprinkle with remaining cheese--bake 5 more minutes or until cheese melts. Sprinkle lettuce and tomatoes over casserole and serve.

If you don't have a package of Taco seasoning, mix your own!

1 Tablespoon Chili powder
1 Tablespoon cumin-or Mexican seasoning
1 Tablespoon garlic powder
1 Tablespoon onion powder
1/4 Tablespoon crushed red pepper

Mix all ingredients and store in covered container. I just pour out the amount I want to use. When using to make tacos, add mix and 3/4 cup water to ground beef.

This seasoning plus 1 1/2 cups tomato juice and 1 Tablespoon vegetable oil makes Enchilada sauce.
