2 lbs. stemmed seedless green grapes, 1/2 cup whole blanched almonds 2 garlic cloves 6 tbsp minced cilantro 3 tbsp good quality sherry vinegar 2 tbsp fresh squeezed lime juice 1 1/4 tbsp kosher salt 2 English cucumbers cut crosswise into 1-2 inch pieces 3 tbsp olive oil 2 more to finish.

Work this in batches. combine grapes almonds garlic cilantro vinegar lime juice and salt into a blender and blend Add cucumber and pulse until blended . You want some texture so do not over blend. Do in 3 4 batches pour all into a bowl stir in 3 tbsp oil. Refrigerate 2 hours to a chill Taste add salt . Ladle into bowls and drizzle virgin olive oil over serving.
