16 Each lg. Shrimp, peeled, Cleaned and cooked
1 T. Tarragon, Fresh Chopped
1 1/2 lb. Asparagus, ends trimmed
1/2 Red Leaf Lettuce torn in pieces
1 Head Radicchio, torn in pieces
1 cup French Dressing
1/2 cup Mayonaise
lemon circles for garnish
4 each Italian Plum Tomatoes

Directions:
Boil water, squeeze juice of 1/2 lemon in water. Blanch asparagus in boiling water 3 minutes, shock back to color in ice water. Cut asparagus into 1" to 2" pieces. Mix French dressing, tarragon, and mayo together. Toss salad greens with chilled asparagus, arrange on plates. Top with shrimp garnish, tomatoes, & lemon circles. Leave dressing on side.
