1 1/3 cups sugar
1 cup pumpkin
1/3 cup oil
1/2 cup milk
2 eggs
1 1/3 cups flour
1 tsp. baking soda
2 tsp. pumpkin pie spice
1/2 tsp. salt
1/2 cup chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 350.
Mix all ingredients except for nuts.
Fold in nuts.
Grease and flour loaf pan.
Bake 60-65 minutes or until tested done with a fork.

My mom got this recipe from her step mother-in-law, and Mom made it frequently as I was growing up. It's my go-to for gifts, holidays, and overnight guests. It's easy, freezes well, and can be baked into muffins as well.
