Rolling pin (unless using shop bought ready rolled pastry)
Baking tray
Frying pan

¼ Onion
¼ Pepper
¼ Aubergine
½ Courgette
¼ Can chopped tomatoes
1 Tbsp olive oil

Directions:
Directions:
1. Turn oven on to 200º or gas mark 6

2. Finely chop the onion, cube the pepper and courgettes. Peel the aubergine and then dice.

3. Heat the oil in the frying pan and gently fry the vegetables, then turn off the frying pan heat.

4. Stir in the chopped tomatoes.

5. Roll out the pastry on a baking tray and spoon the mixture down the middle of the pastry.

6. Cut the pastry in strips and lattice over each other to seal.

7. Put in oven and bake for about 20-25 minutes until nicely browned.

Multiply up to make enough to feed more than one. This doesn't reheat very well so if it's just for you I'd recommend keeping quantities for one.

I like to add a little a teaspoon of curry powder or something similar to give it a bit of a kick and dot with cheese, feel free to experiment.
