4 c. dry Rhubarb
1 c. Sugar
2 T. Cornstarch
1 c. Water
1 t. Vanilla

Topping
2 c. Flour
1 1/2 c. Oatmeal
2 c. Brown Sugar
1 c. Melted Butter
2 T. Cinnamon

Directions:
Directions:
Put dried rhubarb in 9x13 glass cake pan. In a small sauce pan combine sugar, corn starch, water, and vanilla. Cook until thick and clear stirring constantly. Pour over rhubarb and cover with topping. Bake at 350º for 1 hour.

Best time of summer? Choppin' down huge stalks of rhubarb in mom's garden for her best desert ever (in my book) Rhubarb crunch (crisp). I don't remember anyone ever making it in our area, or even having it anywhere else, so it was a rare dessert I will always associate with mom at home. -Jim
