1 Sweet potato
1 Tbsp curry powder
1 Can chickpeas
1 Can chopped tomatoes
2 Tbsp olive oil

Equipment needed:
One roasting tin, one small saucepan or medium size frying pan and a peeler.

1. Turn oven on to 190º or gas mark 5

2. Peel the sweet potato and cut into cubes about 2cm x 2cm

3. Add one tablespoon of the oil to the tin and heat in the oven for a couple of minutes then add the sweet potato and roast for about 25 minutes

4. While that's cooking heat the rest of the olive oil in the pan and add the curry powder, stirring.

5. Drain the water from the can of chickpeas.

6. Add the chickpeas and tomatoes.

7. Fill one of the empty tins with water and add that too.

8. Bring to the boil and then leave bubbling on the lowest heat setting.

9. Then remove the roasted sweet potato from the oven and add to the pan.

10. Cook through for about 10 minutes then serve with bread, rice or veg.

Roasted sweet potato is yummy and can go with many things, eg instead of chips. You could speed up this recipe by roasting the potato at the beginning of the week, maybe whilst cooking something else then you could just pull it from the fridge and add to the pan mixture making it only 10-15 minutes.

You could also multiple the quantities and using a larger pan make a huge batch of this and pop into Tupperware pots so you've got plenty in the freezer when you need something quick.

Unless you but your sweet potato as an individual (which can be done in some supermarkets) you might have a bag to use up after making this. In which case you can boil & mash them or make fries with them too.

Chickpeas are a great source of protein and can be added to tuna or other salads or used in wraps or even made into falafel.
