3/4 cup all-purpose flour or bread flour
1/2 cup cold water
1/2 teaspoon active dry yeast

1 cup whole milk(cold)
1 teaspoon active dry yeast
2 tablespoons sugar
1 teaspoon salt
2 tablespoons unsalted butter (melted)
3 cups all-purpose flour or bread flour

Mix the 3/4cup flour,1/2 teaspoon yeast and 1/2 cup cold water In a medium bowl,
beat until the batter is smooth and glossy about 100 strokes.Cover and let set on counter for two days.
After the 2 days, in the bowl of a stand mixer whisk together the 1 cup of cold milk and 1 teaspoon yeast, let set for 10 minutes, then add the dough starter use
the whisk to break the starter up in the milk.
It should become frothy, add the 2 T.sugar,
1t.salt and 2 T melted butter whisk to combine, add 3 cup of flour using a heavy spoon
until it form a shaggy floury dough.Then with the dough hook knead for 8 minutes
until it comes together in a smooth ball and spring back when poked.Put dough in greased bowl, cover and refrigerate for 2 days.After 2days it’s time to make muffins.Roll dough thin enough to make 12 muffins. Cut dough with a 3 1/2 inch circle cutter. Place muffins on a cookie and sprinkle a little cornmeal on top of each muffin. Let rise until puffy. Heat a skillet with a little butter and lightly brown muffins on both sides. Place on cookie sheet lined with parchment paper so they don’t touch. Baked in a preheated 350 degree oven for 20 minutes.
