1 onion
2 peppers
1 can chopped tomatoes
Some tomatoes
3 tbsp BBQ sauce
1 tbsp olive oil

Optional:
Add chopped pepperoni or chorizo if you want some protein
Add paprika or chilli powder if you want some extra kick

A medium-large size saucepan

1. Chop your onions, tomatoes and dice the peppers.

2. Add the oil to your frying pan and when hot, add the onion and peppers.

3. Fry for about 3-5 minutes then add the fresh tomatoes, chopped tomatoes and BBQ sauce. (and pepperoni slices if using)

4. Heath through for about 10 minutes and then serve.

This is super quick, full of goodness and goes lovely with a bread roll. Put the leftovers in a tub and have it the next day or pop in the freezer for later.

Peppers are available in red, yellow, orange and green. The green ones are best to avoid unless you're making a recipe which specifically asks for them as they're more bitter than the others. Always check the prices as sometimes a pack of three can be more expensive or cheaper than buying individual peppers.

Some tomatoes= If using whole tomatoes then about 3 cut up, if using cherry tomatoes then about 12 cut in half.
