6 strips Bacon, cut into small pieces
1 medium onion, sliced thin
2 (4) tsp flour
1 (2)Tbsp sugaar
1 1/2 (3) tsp salt
1/4 (1.2) tsp pepper
1/2 (1) c water
1/2 (1) c parsley, chopped medium
1/3 (2/3)c cider vinegar
1 1/2 (3) # red boiling potatoes cooked to just tender(do not overcook), sliced

Directions:
Directions:
Saute cut bacon until medium-crisp, but not too dry. Drain off most of fat.
Add sliced onion and cook about 3 minutes.
Add all other ingredients except vinegar and potatoes.
Cook preparation, stirring all the time, until it thickens slightly, then let simmer about 3 minutes. Now add vinegar, and simmer about 2 more minutes. Last, add sliced potatoes, and blend gently. Remove from heat and serve warm.

Grandma Florence made this when we went to Hamlin Lake (Ludington, MI) because Aunt Dot loved it. She always laid the potatoes fanned in the oval casserole and then poured the sauce over. She garnished it with chopped parsley.
This is always a favorite for any time of the year.
