Ingredients: 8 cups unsifted flour, separated 3/4# butter 1 1/2 cups cooked, mashed potatoes (Cool but not cold) 8 egg yolks 1 Tbsp salt 1 cup water
Filling: 1# Dry Curd (Farmers Cheese) 2 egg yolks 1/2 tsp. salt 1/2 tsp pepper

Directions:Mix butter and 4-5 cups flour until crumbly. You can add the egg yolks and salt all together, mixing thoroughly. Add water and the rest of the flour. Use your own judgement for mixing ingredients. If dough is dry, add some of the water along with the flour. after dough is mixed, knead for 5 minutes.
Filling: Mix all filling ingredients together.
Roll out portion of the dough on lightly floured surface. Drop filling by teaspoonfuls about 2" apart and about 2" away from the edge. Fold edge of dough over the filling. Use cup or glass or donut cutter to create a pierogi. Use a fork and press the edges to seal. Heat water to a rolling boil. Slowly boil 4-6 pierogi at a time 3-4 minutes until they float completely. Use a slotted spoon and serve hot with butter. NOTE: 2x filling recipe makes enough for 1 dough recipe. |

Notes: Pierogi-fest was a popular event for us all when the kids were in high school. Poor Grand Speed was cooking for an hour while hungry mouths kept looking for more. She loved to see everyone enjoying the Pierogi.
