1 cup soft butter
½ cup powdered sugar
1 teaspoon vanilla
¼ teaspoon salt
¾ cup crushed peppermint candy (1 - 16oz box candy canes)
3 cups flour
¾ cup finely chopped nuts (optional instead of peppermint candy)
additional powdered sugar

Directions:
Directions:
In a large bowl combine butter, ½ cup powdered sugar, vanilla, salt and peppermint candy. Mix on low speed for about 1 minute. Lightly spoon flour in mixture; blending at low speed until just combined.
* Optional - if adding nuts, stir in after flour is mixed.
Roll dough into 1-inch balls. Place about 1-inch apart on cookie sheet. Bake at 350º for 8-10 minutes until firm to the touch but not brown. (Do not over bake)

While warm, roll balls in additional powdered sugar. Cool. Re-roll in powdered sugar just before serving.
