1 cup orzo
1/4 cup olive oil
1 teaspoon salt
Fresh ground pepper
1/4 cup fresh lemon juice
1 lb. shrimp, peeled and deveined
1/2 cup minced green onions, white and green parts
1/2 cup fresh dill or 1 teaspoon dried dill
1/2 cup fresh parsley
1/2 English cucumber, unpeeled and diced
1/4 cup small diced red onion
1/2 to 3/4 cup feta cheese, diced

Directions:
Preheat oven to 400º. Cook orzo in a pot of boiling water for 9 to 10 minutes. Drain and pour into large bowl. Whisk together the lemon juice, olive oil, salt and pepper to taste. Pour over hot pasta and stir well.

Meanwhile place shrimp on a sheet pan, drizzle with olive oil and sprinkle with fresh pepper. Toss to combine and spread out to single layer. Roast for 5 to 6 minutes, until shrimp are cooked through. Don’t overcook.

Add shrimp to the orzo. Add green onions, dill, parsley, cucumber and red onion. Toss well and carefully stir in feta cheese.

Set aside at room temperature for 1 hour ago allow flavors to blend, or refrigerate overnight. If refrigerated, bring to room temp before serving. Enjoy!
