Turkey Tetrazzini Recipe

2# cooked turkey (or chicken)
1/2# broad egg noodles
2 Tbsp melted butter
2 Tbsp grated Italian cheese
1/2# or more fresh mushrooms, sauteed in 2 Tbsp butter with 1 minced garlic clove
a little pepper
Additional salt, pepper, and cheese

Cook noodles in gently boiling unsalted water about 10 minutes, or until crisply tender, but not too soft. Drain.Season with 1 tsp salt, 2 Tbsp melted butter, cheese, and 1 cup of Sauce for Tetrazinni (following)
Saute mushrooms in 2 Tbsp butter for 5 minutes. Season with 1/2 tsp salt, pepper and 2 cloves of minced garlic.
Pour and spread 1 cup of Tetrazzini sauce in 11x13 buttered baking dish. Spread the noodle mixture into pan, spread mushrooms over noodles, pour a little of the sauce over mushrooms, then cover with the cut chicken or turkey. Season with about 1/2 tsp salt and a little pepper. Pour rest of sauce over and sprinkle top with about 1/4 c grated Italian cheese and drizzle with 2 Tbsp melted butter.
Bake at 350º about 30 minutes, then broil about 5 minutes or until golden brown. Serve hot.
