4 medium-size sweet potatoes
2 chicken breasts, cut up in bite size pieces
Jerk seasoning, to taste
Butter
Mango Salsa (see below)

1 mango, diced
2 roma tomatoes, seeded and diced
½ serrano or jalapeño pepper, seeded and diced
¼ cup cilantro, chopped
¼ red onion, chopped
Juice from ½ a lime
½ tsp salt
1 TBSP olive oil

Directions:
Directions:
Bake sweet potatoes whole about 45 minutes at 400º, or until soft. Meanwhile, mix all ingredients for the mango salsa and set aside. Cook chicken in a pan with a little olive oil and jerk seasoning to taste. To assemble, slice sweet potato the long way and season with salt, pepper, and butter. Top with a scoop of chicken, then top with a scoop of the mango salsa. Try to get a little bit of everything in every bite!
