2 Tbsp Chopped cooked bacon
8 cups mixed romaine and iceberg lettuce, chopped into ½ in pieces
1 cooked boneless/skinless chicken breast, diced
½ cup diced tomato
¼ cup crumbled bleu cheese
¼ cup sliced black olives (any type you prefer)
¼ cup carrots (sliced into coins and halved)
¼ cup diced and seeded cucumber
¼ cup red onion (optional)
¼ cup Frito's corn chips, crumbled

½ cup red wine vinaigrette or to taste (recipe follows)

Combine all salad ingredients. Toss with vinaigrette and top with crushed corn chips
 

Red Wine Vinaigrette

1 green onion
1½ tsp freshly chopped garlic
¼ cup honey
½ cup red wine vinegar
1 cup olive oil
½ tsp cracked black pepper
½ tsp salt

Directions:
Directions:
Place onion, garlic honey and vinegar in blender. Start mixing on high speed. Very slowly, add the olive oil into the blender to emulsify. After all oil is added, season with salt and pepper. Store unused vinaigrette in refrigerator. Bring to room temp and shake well before using.

Can also be shaken in salad shaker jar.

Thank goodness I cut this recipe from the Milwaukee Journal when it was highlighting favorite recipes from popular restaurants. (this one was Joey Buona’s Pizzeria Grill on Water St). It is my go-to recipe whenever I’m asked to “bring a salad” and a favorite at family gatherings. It’s easily adjusted for large or small gatherings and, best of all, can be made ahead, i.e., I prepare all the components and line them on the perimeter of the serving bowl with lettuce. A quick toss at serving time, and you are ready to go.

Note: Recipe for vinaigrette makes a generous 2 cups. Can be halved or stored for later use.
