5-6 cups water 1tsp sea salt 1 2lb lobster 2 tbsp olive oil 1 iced onion 1 sliced carrot 1 stalk celery sliced 2 thyme sprigs 1 sliced clove garlic 2 tbsp tomato paste pinch of cayenne pepper 1 bay leaf 1 cup dry white wine 1/3 cup sherry 2 tbsp butter(soft) 3 tbsp flour 1 cup heavy cream.

In a10 qt pot heat water to a boil place lobster in head first adjust heat to gentle boil 15 min until shell bright red and antenna is was;ly released when you pull it. Put lobster on baking sheet and reserve water. shuck cooled lobster. over baking sheet reserve juices tail and claws. Chop up meat and refrigerate cut shell and body into 2 inch pieces in a soup pot heat oil add the shell and body stir for 5 min. stir in carrot onion garlicthme cook 5 min stir in tomato paste cayenne bay leaf cook 2 min. Add 4 cups of resave water and lobster juices and wine bring to simmer cook 45 min. Set colander over clean pot and strain mixture. Throw away shells add sherry bring to simmerIn bowl stir butter and flour together until smooth whisk into broth;;;;;;; simmer 1o min add cream stir in chopped lobster meat cook until hot . Serve
