8 eggs
3 cups milk
1/4 cup Heinz Dijon Mustard
7 cups challah (egg bread) cubes (3/4 inch)
1 cup each chopped green peppers, red peppers and onions
12 slices cooked bacon, crumbled
2 cups Cracker Barrel Shredded Mozza-Cheddar Cheese, divided

Step 1
Whisk eggs, milk and mustard in large bowl until blended; stir in bread.

Step 2
Cook vegetables in medium nonstick skillet sprayed with cooking spray on medium heat 5 min., stirring frequently. Add to egg mixture along with the bacon and 1-1/2 cups cheese; mix lightly.

Step 3
Pour into 13x9-inch baking dish sprayed with cooking spray; top with remaining cheese.

Step 4
Refrigerate 3 hours.

Step 5
Heat oven to 350ºF. Bake egg casserole 48 to 50 min. or until knife inserted in centre comes out clean.
