1 lb. of whole or filet catfish, (cut whole fish in half)
½ c of white corn meal
½ c of yellow corn meal
1 scoop of Catfish Fry Mix
1 scoop of Seasoned Crispy Fish Fry mix
2 tbsp. of Spice Supreme Fish Seasoning, Red Lobster Seafood Seasoning or (Louisiana Cajun Blackening Fish Seasoning)
¼ tbsp. of Onion Powder
¼ tbsp. of Garlic Powder
pinch of sea salt
pinch of ground black pepper
1 qt. of Crisco Pure Vegetable Oil 48 fl. oz. (*Canola Oil)
1 plastic storage bag or empty seafood mix container
1 cast iron skillet or electric fryer
1 aluminum pan lined with paper towel
1 8 count can of biscuits

Clean and filet whole catfish or filet again catfish if fish is to thick
In plastic storage bag or container mix corn meal and seasoning mix together
Mix salt, pepper, onion and garlic into the cornmeal mixture
Season each fish or season the cornmeal with the fish seasoning
Mix well, place pieces of fish into the mixture and shake well
In an deep fryer add oil and set temperature to 330º or in a black skillet add grease until grease is hot enough. Place fish in fryer or skillet and fry until golden brown on both sides.
Remove from heat and place in aluminum pan with paper towel. When all fish is fried, do not place foil over hot fish, it will began to sweat just place paper towel over your hot fish.

I usually filet my filet catfish again, I do this because I don't like fleshy fish. I think this allows you to fry your fish hard or crispy.
Make coleslaw or buy coleslaw and mix it with Masterpiece barbecue sauce (yellow) this is what goes with this dish ( barbecue slaw) as well as fried biscuits.
Use a can of buttermilk biscuits and fry it in the fish grease. Before frying biscuits use a toothpick and put a hole in them so that when they fried they will cook all the way through. Remember to keep an eye on the biscuits, you will have to keep turning them around until they become golden brown, when done remove and place on paper plate lined with paper towel and place paper towel on top of them as well to keep warm.
