2.5 lbs mussels
2 tbsp butter
1 tbsp olive oil
1 sweet onion diced
2 garlic cloves minced
¼ tsp salt
¼ tsp pepper
2 tbsp red curry paste
1 can coconut cream
¼ chicken or seafood stock, optional
2 green onions sliced

scrub mussels removing the beards

heat wok over med heat, add butter and olive oil. when melted add onion, garlic, salt and pepper.
stir and cook 5 min. stir in curry, cook 5 min. stir in cream aand stock and bring mixture to a simmer. reduce heat to med low. add mussels and toss. cover and cook until mussels open about 5 minutes.
Garnish with green onions. serve with bread or fries.
