1 (6 ounce) pkg washed baby spinach leaves (take off stems)
1/3 cup cubed cheddar cheese
1 Fuji apple -- peeled, cored, and diced
1/3 cup finely chopped red onion
1/4 cup sweetened dried cranberries or cherries
1/3 cup blanched slivered almonds
3 tbsp poppy seed salad dressing
Optional: add Mandarin oranges (canned or fresh)
can substitute crumbled feta cheese for cheddar cheese

Directions:
Directions:
In a large salad bowl, combine the spinach, cheddar cheese, apple, onion, cranberries/cherries, and slivered almonds.

Toss with poppy seed dressing just before serving
