Directions:1. Salt and pepper the roast... shoulder or rump is the best 2. Dust it flour 3. Brown it in a drizzle of olive oil on all sides 4. Remove and add garlic and deglaze the pan with about a cup of red wine. 5. Add better than beef bouillon (about 2 to 3 Tbs) 6. Add pkg lip onion soup mix 7. Add Beef stock (about 1 quart) 8. A few shakes of Worsteshire 9. 1 cup fresh chopped parsley 10. A few dashes of Oregano 11. Salt and pepper to taste 12. Add meat back to pan 13. Add 1 lg chopped onion 14. Add some chopped Carrots 15. Add some Sm red potatoes 16. Bake on 450 for an hour 17. Then reduce to 250 and cook about 6 hrs
Sometimes if I want the juices a little thicker add some cornstarch and water mix well and add to the juices. But do that several hrs before it’s done ... just gives it more of a gravy |
