1 whole deboned chicken
Chicken broth from cooking the chicken or canned
Onion
Celery
Minced Garlic
Chicken Seasoning
4 cups flour
2 tbls baking powder
1 tsp thyme
1 tbls parsley
salt and pepper
1 chicken bouillon cube

*note...you could use a rotisserie chicken for a lazy girl substitute

Boil the whole chicken. Use chopped onion, celery, minced garlic, chicken seasoning, salt and pepper. After the chicken is cooked DONT THROW AWAY the chicken broth. Just use a strainer to get the onion and celery out.

1. Mix flour, salt, pepper and baking powder. Set aside.
2. Pour 2 cups of chicken broth in your stand mixer (put the paddle attachment on)
3. Slowly pour the flour mixture into the stand mixer until a soft ball forms. You might need to add more broth or flour to make the dough the consistency that you want.
4. Roll the dough out to about 1/4 inch thick and cut square.
5. Bring that chicken broth that you cooked the chicken in and an extra quart of canned broth to a boil. Or if you are using a rotisserie chicken, use canned broth.
6. Add dumplings into the boiling broth, one at a time.
7. Boil about 10 minutes then turn burner to medium heat.
8. Let cook about 10 minutes and then add the shredded up chicken.
9. Add the parsley, thyme and the bouillon cube and salt and pepper to taste.
10. Cook on low for about 10-15 minutes or longer.

This recipe is From Bradley Myers mom - Pat. Then I got the Lori Myers version and then I added the rotisserie part. The homemade dumplings are GREAT and really easy. DONT use FLAKY LAYERS biscuits to cheat.....take it from me....DONT DO IT....if you are lazy and want to use biscuits, just use buttermilk biscuits....the flaky layers biscuits LITERALLY disappear.
