1 TBS olive oil
2 onions, chopped
4 garlic cloves, minced
6 skinless chicken thighs
1 can diced tomatoes (14½ ozs.)
1/4 cup white wine
2 bay leaves
1 cinnamon stick
1/2 tsp ground cinnamon
1/2 tsp black pepper
1/4 tsp salt
6 cups hot cooked Couscous

Directions:

1. In large skillet, heat oil. Add onions and garlic; cook stirring as needed, until softened, about 5 minutes.

2. Add the chicken, tomatoes, wine bay leaves, cinnamon stick, ground cinnamon, salt and pepper. Bring to a boil. Reduce heat and simmer, covered, stirring as needed until chicken is cooked (about 30minutes). Discard bay leaves and cinnamon stick.

Serve couscous, topped with chicken and sauce.
