2 cups cottage cheese (drained)
1/2 cup sugar
1 tsp vanilla
Zest of 1 lemon
6 sheets of gelatin
5 Tbs. rum
1 cup heavy cream

Directions:
Directions:
Cream together the cottage cheese, sugar, lemon zest. Dissolve the gelatin in 5 Tbs HOT rum. Mix this into the cottage cheese mixture. Beat the heavy cream until stiff and then blend into the cottage cheese mixture.
