Easy Beef Stroganoff from leftovers

6-10 oz leftover steak (we use grilled NY strip) If you seasoned it the first time you cooked it, beware of adding extra salt and pepper-but I add pepper
4 TBSP butter
8oz mushrooms (pre-sliced button, quartered whole cremini or slice a couple of portobellos)
1 large shallot or thinly slice 1/4 cup of onion and add a bit of chopped garlic
2-3 TBSP flour
1/3 Cup Brandy or Cognac
1 Cup Better than Beef Broth mix --1 TBSP BTBB concentrate mixed with 1 C H2O and heated in microwave for 1 minute and mix it up (or use canned reduced sodium beef broth). While I love BTBB concentrate it is VERY salty.
1/3 Cup sour cream or more to taste
Egg noodles (we have served this over rice a couple of times)

Saute mushrooms in butter in a 12 inch non-stick skillet with high sides
Add beef broth to cover mushrooms, bring to boil then reduce heat to simmer until mushrooms get a bit brown and soft
Lower heat to medium simmer until liquid partially evaporates by 1/3
Add shallots or onion--cook 3-4 min
Sprinkle flour on shallot or onion mixture and cook until browned
Add brandy
Scrape fond (browned bits) from pan
Reduce heat to low when mixture thickens
Add sour cream and steak
Warm on low until everything is hot
Serve it up over cooked egg noodles or rice.

We serve this with a veg (microwaved asparagus) or Lesuer Young Peas. Or with an iceberg wedge salad with thousand island dressing. (SO 70s)

Use rare or medium rare steak as it will be the second time it gets heated.

If you have extras, heat on low in microwave or on stove top. Do not overcook or your steak will be tough.
