10 C Water
6 C Chopped Escarole or Fresh Spinach
2 tsp Evoo
2 Garlic Cloves, minced
1/2 C Water
1 C Chicken Broth
1/4 tsp Crushed Red Pepper
1/4 tsp Black Pepper
1 (19oz can) Cannellini Beans, drained
1 (10oz can) Condensed Chicken Noodle soup, undiluted
1/4 C Fresh Grated Parmesan

Bring water to a boil, add escarole and cook till tender (10 minutes), drain. Heat EVOO add garlic sauté 3 minutes. Add water, soup, broth, peppers, and beans. Bring to a boil. Add cooked escarole. Sprinkle with cheese.

This is a nice and easy lite soup. I’ve used spinach in place of escarole. You could also add ground turkey or some tiny frozen meatballs to hearty it up, either work well.
